The best investment in my kitchen in the past four years has been a mandolin. Essentially, it’s an adjustable food slicer for fruits and vegetables and makes preparing salads a breeze. The intricate cutting that you usually have to do for good salads is so much easier with a mandolin, and preparing vegetables for pickling is just as easy. Not only does this make everything you slice look uniform and beautiful, but it also gives you fantastic opportunities to add texture to your typical dishes. That particular model wasn’t available at the time of writing, but it’s an example of what to look for.

If you cook steak regularly, you likely already have a cast iron pan. But these pans are just as helpful for making all types of meat, from chicken to squid. One of my favorite recipes that I’ve honed over the years is a squid and lime bagna cauda – and well-seared baby squid is one of the key ingredients. When it’s too cold or I’m too lazy to use the grill, my cast iron pan is perfect for frying those tiny tentacles.

A good chef’s knife is not cheap, but it is an investment that will last you for years. The problem is, many of us settle for mediocre knives because our old ones are getting bored and we don’t want to buy a $ 150 knife every couple of years. The tool that will help you keep your knife performing as best as possible is a sharpener. You can buy a sharpener that works well on Amazon for just $ 6.

One of the biggest barriers to making complex dishes is how it is prepared. When you need to chop, dice, or roughly chop half a dozen ingredients, a spacious cutting board makes all the difference. Yes, you can buy small plastic cutting boards for crazy cheap approvals at TJ Maxx, but paying just the $ 20 for a board that’s at least 18 by 14 inches is a better investment. You’ll be instantly grateful if you can keep three separate stacks of herbs on top and chop carrots without the slices rolling on the floor.

If you really want to bake high quality breads or desserts, kitchen scales are a must. You can buy one for just over $ 10 on Amazon, and it will make your recipes that much more precise. Cooking is an art and baking is a science. Science depends on math, and good math starts with accurate measurements.

Five degrees can separate a good steak from a perfect one, and unless you are a skilled cook, eye-cooking is not a reliable way to get the perfect results. Especially if you’re experimenting with different types of meat, a meat thermometer is one of the most common tools in your drawers. Three years after buying my first, I honestly don’t know how I tried to cook meat without meat.
